One of the worst things that can happen when receiving gifts is not disliking the gift, but loving it and having your gift giver tell you that they made a mistake and the gift was meant for someone else.
Pistachio Cookies
What you need:
3/4 cup pistachios
1/2 cup confectioner's sugar
1/4 cup white sugar
1 cup all purpose flour
1/4 teaspoon salt
1 stick butter, at room temperature
What you do:
Preheat the oven to 325 F. In a food processor, blitz together the pistachios and sugars. Until it is finely ground and completely green. Next blitz in the flour and salt until nicely combined. Then blitz in the butter until the dust pulls together into a dough.
Roll about 1 teaspoon of dough into a balls and place on a parchment lined cookie sheet 1 inch apart from each other. Bake for 15 minutes.
