Oatmeal Walnut Cocoa Nib Cookies

IMG_2297

Its a slow slow week were living, these days after Christmas and before New Years Day but whats on your brain?

Are you ready to say goodbye to 2011? Are you ready to shake it out?

2011 was a beautiful year but Im ready to shake it out so I can put some beauty in 2012.

These days between Christmas and New Years feel so still and quiet and yet very contemplative and heavy with potential.

Im not talking about the potential of I dunno, losing weight and eating better and drinking more water and all that important nonsense.

Im talking about the potential of it all. Another year behind us and another chance in front of us.

What are we going to do with it? Now is the time to think.

Now is the time to think and eat cookies.

Lets get into imagining our future selves! This is it!

IMG_2279

IMG_2240

Aaaahh oatmeal cookies. So much potential. It feels like all you need is brown sugar, cinnamon and freshly grated nutmeg.

Such a simple treat.

IMG_2245

Oh you also need oatmeal. Duh.

I love to use old-fashioned oats becau! se theyr e big and hearty.

Were also going to add two kinds of chocolate to the cookies. Chocolate chips and cocoa nibs. Were talking melty chocolate and crunchy chocolate flavor.

IMG_2269

Id like you to meet my dear friend,Cocoa Nibs.

Cocoa nibs are coarsely ground cocoa beans. I think they taste like a mix between roasted coffee beans and dark chocolate. Theyre crunchy and full of nutrients. I love cocoa nibs on top of vanilla ice cream, with yogurt and fruit, and definitely in these oatmeal cookies where they add a lovely crunch and deep chocolate flavor.

Cocoa nibs. Get into it! Seriously.

IMG_2305

These Oatmeal Walnut Cocoa Nib Cookies are exactly what you want them to be. Expected and hearty. Totally comforting and delicious and with a touch of something just a bit different (thats the cocoa nib part). These cookies are exactly the way I like to approach a new year: with certain expected comforts, but full of newness and surprise and chocolate.

Were almost in the future!

Oh! Ps. The best, most delightful way to scoop cookies from a big heap of dough into perfectly portioned individual cookies is with acookie scoop. I gifted myself one of these and Im hooked.

< p>Oatmeal Walnut Cocoa Nib Cookies

makes about 2 1/2 dozen cookies

Print this Recipe!

1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons pure vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

3/4 teaspoon salt

2 1/2 cups old fashioned oats

1 cup coarsely chopped walnuts

1/2 cup cocoa nibs

1 cup semisweet chocolate chips

Place racks in the center and upper third of the oven and preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.

In the bowl of an electric stand mixer, fitted with a paddle attachment, add butter and sugars. Beat on medium speed until the mixture is light and fluffy, about 3 to 5 minutes. Stop the mixer, scrape down the sides of the bowl, and beat in eggs. Add eggs one at a time, beating for one minute on medium speed between each addition. Beat in the vanilla extract.

In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Add flour mixture all at once to the butter and egg mixture. Beat on low speed until the mixture just comes together. There will still be large flour pockets thats ok.

Add the oats, walnuts, cocoa nibs, and chocolate chips. Remove the bowl from the mixer and use a spatula to finish incorporating the mixture by hand. Mix together until no flour bits remain, and everything is well mixed together.

Scoop dough out by the tablespoonful onto prepared baking sheets. Bake for 10 to 13 minutes until toasted brown on top. Remove from the oven. Allow to cool for 5 minutes before removing to a wire rack to cool completely.

Cookies will last, well wrapped at room temperature, for up to 4 days. Unbaked cookie dough can also be left in the fridge for about a week, and freezer for over a month.

Chote Chitr, Bangkok

So much had been said about the legendary Bangkok icon of a hole-in-the-wall eatery Chote Chitr (in recent years, more bad than good) that we didn't know what to expect. We were prepared for the food to be either sublime or disappointing and overpriced; the service was known to be erratic and subjected to some degree of arrogance on the part of the lady owner.

Well, no knocking till we tried it, so after a 15-minute walk from Rambutri area, we were somewhat heartened to like the facade that we saw, on this small road off Tanao Road.

Old but clean and well-kept, the shop was empty when we got there slightly before 6PM. Celebrated lady owner came to take the orders, a commanding air and her equally well-known Shih Tzu in tow. We are no fans of small, yappy dogs but this one was subdued and kept mostly out of our way so we could get down to the eating.

The famed Banana Flower Leaf Salad proved its reputation correct. The nutty dressing drew the subtle bouquet of the banana flower out, inspired feelings of rolling around in grassy splendour. Or one of them Thai beaches.

We decided to venture against lady owner's recommendations (which incited visible anno! yance) a nd picked another starter, Spicy Chicken with Salted Egg paste served with fresh vegetables. This was unusual in its pairing of the flavours - salted egg yolk and a good dose of tamarind? juice. Would go beautifully with mountains of fluffy white rice. No regrets but we would probably skip this in the future.

Finally, the stunning Chu Chee Curry with River Prawns - more sweet than spicy, the fresh crunch of the prawns when drenched in the coconut-based red curry, with the striking scent of kaffir lime leaves, sealed it for us.

Bill was around THB600, not the cheapest given that it's Bangkok, whose streets are teeming with great food at a fraction. But the succulent meal, paired with the opportunity to meet the grand dame (and defy her!) was well worth it!

Like a G-Stick @ Ben's Independent Grocer, Publika, Solaris Dutamas

Little girls love ice-cream and Baby C is no exception. Her face lights up whenever she sees ice-cream..

So when we were at Ben's Independent Grocer and she spotted the G-Stick shop (right next to Ben's General Food Store), this is what her face looked like. Happy, yes?

The name of this place reminds us of that song.. Like a G6.

Wonder what put a smile on her face? This......

Very pretty gelato pop sticks, all homemade and all natural.. There were eight flavours when we visited -- Christmas pudding, black sesame, chestnut, chocolate hazelnut, rocky road, mango, pistachio and raspberry yoghurt.

We promised to get her one after our lunch, and her pick was Rocky Road. I think it's because she saw marshmallows on it! She was pleased to find even more marshmallows encased within the ice-cream. Each bite was like a treasure hunt for her. Her daddy would eat any walnuts she came across. :P

Time for the taste test....

One happy customer :)

Price: RM8.90 each.

cinnamon brown butter breakfast puffs

left to cool and set

I took a Home Economics class in the 7th grade. I probably dont need to tell you how stoked I was about this (especially after nearly flunking Wood Shop the semester before with the saddest toolbox ever) although I am fairly certain they failed at whatever household management skills theyd hoped to impress on my 12-year-old self. Im currently staring down a particularly fetid sinkful of dishes, willing them to wash themselves, while deep creases form in a towering basket of clean laundry that has yet to be folded, though perhaps theres a glimmer of hope for the next generation. Nevertheless, the one class I remember perfectly was the one in which we made a puffy muffin embodiment of butter-slathered, cinnamon-sugar broiled cinnamon toast. It could be whipped up in no time, presumably along with a stack of bacon while wearing a gown-like robe and fuzzy slippers to the delight of sleepy-eyed children tumbling down the stairs. (Sorry, my housewife archetype is firmly etched in the Brady Bunch era.)

These pastries are, amusingly, called French Breakfast Puffs, I presume they are French in the way that French Toast and French Fries are, or! that I convince myself I am every time I order Lillet, which is to say, dubiously. Their origin, however the Betty Crocker Test Kitchens isnt half as interesting as their flavor, which is a little bit snickerdoodle, a little bit butter cake and a lot of addictiveness. My first thought upon eating one in class that day was Its like a doughnut hole! and my second was Why hasnt my mother ever made these for me? I thought she said she loved us! and then I pouted for the remainder of the hour. What? I said I was 12.

Salmon Run @ KRPM Dinner @ Restoran Tuck Kee

I enjoyed this crackers, it is thin, cripsy, tasty and addictive.Three bottles of whiskies for this dinner and that is too much for a table of 10.We pre-ordered a salmon fish from Ah Tuck (the owner of Restoran Tuck Kee) for our salmon run at Kelab Rahman Putra. This was a delicious and sweet raw salmon fish. The players of the day some were "injured" and some won. That's part of the game and all ended well with a happy & lovely dinner at Restoran Tuck Kee @ Bukit Maluri, Kepong. The salmon was so truly lovely, everyoneenjoyed itand it needs not take a "nihon gin" to serve good raw fish. Ah Tuck can do it.Shark bone's soup was marvellously tasty.Smoked duck meat slices at the peripheralwith smoked chicken meat at the core. The smoked meat was a bit salty butpaired well with Old Parr. This was an interesting dish of a comnbination of seafoods, fried dried fishes, blanched octopus, baby abalone and jelly fish.Very suitablefor our whiskies drinking....Ah Tuck's creation of the remains of our salmon fish in a clay pot with a mix of cooked meat and crispy fried fish head and bones. It was a great dish and really something special for us.The grilled lamb did not turn out well, it was slightly tough and fortunately I had the smallest piece and was able to finish it.Siu Pak Choy with minced meat & chopped prawns toppings was another delicious dish.It was time for some carbohyrate intake and it had to be a Hokkien Fried Noodle...truly sinful.Ah Tuck had the honour to mix the fried noodle and the egg. Thanks to Ah Tuck a 100% customer friendly chap.hApPy winners...The players for the whiskies challenge.... Almost everyone "ta pau" Ah Tuck's big pau back home afterthesumptous meal. There were already talks of the next warfare and looks like one being fixed beforethe end of 2011.

Porking Out At Chicago Rib House 1 Utama

Most of us know that Tony Romas Chain of restaurants in Malaysia were serving HALAL foods across all their outlets. Some of you may dine in Tony Romas while in oversea where they serve a hell good pork ribs dishes. In Malaysia they do serve the same thing but under a different brand name which [...]

Verona Trattoria

This street is steaming up; opening next door to Bistro a Table at Section 17, Verona Trattoria is stirring up a taste of Italy to complement its neighbor's French sensibilities.

Expect the basics here _ simple pastas, pizzas & no-frills fare. If some of the food feels familiar, that could be because Chef Enzo Dente of SS2's Buonasera is Verona Trattoria's consultant chef. Prices are democratically affordable; nearly every dish here costs below RM30.

Potato gnocchi with gorgonzola sauce is a surefire stomach-stuffer; it seems slightly too stodgy, but that describes nearly every gnocchi in KL.

Risotto with beef bacon & pecorino cheese (that's what the menu says). Errmm, what cheese? Still, if you must have carbs, this is far more fun & flavorsome than porridge.

Spinach & cheese ravioli. Insidiously rich & creamy, ensuring that we'll never be able to fit into our mothballed, size-28 jeans anytime soon. Or even 30, at this rate.

Speaking of Bistro a Table, head there this month to sample mind-blowing desserts like this mangosteen pavlova. Ripe morsels of our favorite fruit, resting in a child's sweet fantasy of cotton-candy-sticky meringue accented by Chantilly cream & kaffir-infused candied cucumber.

Profiteroles with Gula Melaka, pandan cream & cracked pink peppercorn. If only the French had colonized Malacca _ instead of the Portuguese or the Dutch _ this might have been something we could have savored all our lives, instead of waiting for chef Isadora Chai to create it only now.

Jalan 17/54, Petaling Jaya.
Closed Tuesdays.

Peter Hoe, Jalan Hang Lekir

I first heard of Peter Hoe when my colleague went there. And all I heard was it's expensive, the food was not worth it...
Obviously, Ididn'thave any urge to go there, until recently, when another colleague convinced me to try it.
Peter Hoe mainly is a shop that sells house decors. And tucked at the corner of the shop, was a few tables, which I assume was the 'restaurant'.
The menu was simple, some daily specials on the board (sans the price) and some cakes and quiches at the counter.
There were some choices of pastas, salads and noodles, but my eyes was set on the quiche.
The quiche looks fresh, thick and yummy. There were a few types to choose from..
SL has the Tomato and Chinese Mushroom quiche with salad (RM25)

While I had the Brocolli and carrot quiche (RM25)
So it may seem pricey, but the quiche was huge, thick, yet fluffy in texture and extremely creamy. Both tasted fantastic, mine was filled with lots of shredded carrots, balancing the eggy cheesy filling perfectly. The c! rust was mostly soft, with bits of crisp at the edges, which I was fine with.
SL's mushroom, tomato quiche was equally delish, velvety egg filling and aromatic cheese makes this such a rich meal. Luckily the salad was light and fresh, wonderful pairing with the quiche.
I wanted something hot, so I ordered a bowl of mushroom soup (RM16)
It's not the thick, filled with cream types, this was more diluted but had loads of chopped fresh mushroom in it. It was quite tasty I must say, but I found it slightly oily.
I didnt have that bad of an experience actually. In fact, I rather enjoyed my meal there.
So, yes, I would return :).
One word of caution though, do ask for the price of your meal before confirming on the order.

Peter Hoe is located at 2, Jalan Hang Lekir, 50000 KL. It's located above Popular Bookstore, use the side entrance.
