Bavarian Pretzel are different from other regions because they tend to be crustier and more dense than their Northern Counterparts.
Bavarian Plate
My Bavarian Plate came with Crispy Duck, Pork Knuckle, Sucking Pig, Sausages, Apple Red Cabbage, Sauerkraut Potato and Bread Dumplings . The Meats were all very tender and I particularly enjoyed the Pork Knuckle whose skin was super crispy.
Schweinebraten
One of my favorites in Germany. The Roast Pork Shoulder was very tender and seasoned just right it was served with some Red Cabbage, Sauerkraut and Knoddle.
Pl ate of Game
The Platter of Game Meats came with Grilled Wild Boar, Fillet of Hare, Saddle of Venison and was served with a side of Spaetzle and Brussel Sprouts.
Roast Deer Medallions
The Deer Medallions was served with a bowl of Buttered Spaetzle. The meat was tender and went really well with the Glazed Grapes and Mushroom Sauce.
If you are craving for some authentic and good traditional Bavarian Food, Spatenhaus is definitely a place to visit. The portions are big so it is recommended that you come really hungry.

Biscoff Fudge, baby!
I have shared my love for Biscoff cookies with you before. Remember these cheesecake bars I made with a certain cookie crust? Delta gives these cookies out on their flights and when the flight attendants make their way down the aisle, I get excited like a little kid waiting for a snack. Its gotten to where one little two-pack isnt enough when Im traveling so sometimes I even buy my own package to bring along. Its a problem.
Recently I tried them dipped in coffee for the first time.
Oh. My. Cookies.
I dont really drink coffee unless its with dessert, but I may have to start a new habit just so I have something to dip these cookies in.
If you havent tried it before. Dont. And save yourself a little addiction.
Speaking of new addictions, Biscoff also makes a spread that tastes like their cookies.
Ive tried to avoid it for my waistlines sake, but it finally got me.
And, its so good. I think Im in trouble. Big Biscoffy trouble.
I decided to try making some fudge with it the other day so I wouldnt end up eating the entire jar in one sitting,
I usually make Peanut Butter Fudge during the holidays, but I thought it would be fun to try this kind. too.
Off to a good start.

Biscoff spread.
You can see why I thought it would be a great replacement for peanut butter.
Creamy. Dreamy.
And on its way to delicious.
Throw in some marshmallow creme.
Mix it all together
And throw it in the pan.
Spread it right away because it doesnt take long to set.
And, if you want a little crunch, throw in some crumbled Biscoff cookies for good measure.
Or just do half if youre indecisive like me.
Press the cookie pieces in pretty good or they will fall off.
Yum! Yum!
Biscoff Fudge. Make some.
1 1/2 cups sugar
6 Tablespoons margarine
1/3 cup evaporated milk
1/2 tsp vanilla
1/2 cup Biscoff spread
3.5 oz. or half a jar of Marshmallow Creme
If the fudge gives you a! ny troub le, its usually one of a couple of things for me. Getting the sugar mixture too hot and the fudge turns out kinda crumbly or not hot enough and it doesnt quite set as firm. Ive had both happen on occasion. You also want to make sure you have the right amount of marshmallow creme. I usually eyeball it.These are borderline crumbly, but still so good. I suspect I got it too hot, but I also wonder if it has something to do with the Biscoff itself. Guess Ill have to make it again one day soon to see.
I do have to admit, the Peanut Butter Fudge is still probably my favorite, but these are good for a change.
Now, if youll excuse me, I have an opened jar of Biscoff and a spoon waiting for me in the kitchen.

LENTIL MEATBALLS IN LEMON PESTO
I cleaned up all the holiday remnants on Sunday. I made piles of what needs to be returned, boxed up the decorations, and dumped our brittle wreath and miniature tree. No offense to you Christmas cheerleaders, but it all becomes a bit much for me the lists, the toffee, the spending and the formalities. It honestly was a wonderful day, but I think this year, more than ever, we saw most clearly what we wanted from the celebration, or rather what we wanted to contribute to it, and I think next year will look different.
My haste to clean up is a personality trait (a vice sometimes). I like things to be moving forward, to be improving and growing, and the New Years holiday commemorates that. I made a date with Hugh last year to discuss our resolutions for the sake of accountability and it may be one of the highlights of my marriage to date. You can have a list of three or thirty things that youd like to take note of as we dance right into 2012, but having some accountability a person who loves you to listen makes the list worth making. Last year I scribbled down intentions to master roasting a whole chicken, get certified to teach pilates, save a bit of money for a down payment and have chisled arm muscles. The answers are yes, not yet, yes and errr, working on it? But the point is that I wrote them down, shared and revisited the list and I think its an exercise worth doing (It may not give you chisled arm muscles but its good for the spirit).
I really love writing letters. I couldnt write a scholarly essay in college worth reading but I LOVE personal letters. An item on my list this year is to communicate compliments or positive thoughts to people as they cross my mind. I want to send letters of affirmation to friends, or post cards to acquaintences just to say, I really enjoy your blog or, You are super easy to talk to and I like it. Same goe! s for my husband, to remind him how I appreciate how he always make me laugh, or a note to my family. Well call them love letters, and I plan on roping Hugh into this because I think men are even more hesitant to compliment each other. I started by writing a letter to Jeannie, a woman in the food blogging world who lost her husband suddenly earlier this year (you may remember or participated in A Pie for Mikey). I thought of her recently and wanted to write her a letter. Maybe its weird, because we dont know each other, but I am another woman who cant imagine coping with that kind of loss, so I figured Id say hi.
The recipe below is one from her site that Ive tweaked around a bit for my taste. Its nice to have the little nuggets in the fridge to dip in the pesto sauce for an afternoon snack. I havent had them with marinara yet, but I imagine thatd be nice as well.
There will be celebrating with close friends this weekend and hopefully another date to discuss resolutions with my beloved.

LENTIL MEATBALLS // Serves 4, Makes 18 small balls
Meatball recipe adapted from In Jennies Kitchen
The sauce I made is less a pesto and more a dressing, as the lemon juice adds quite a bit of acid to it. I thin mine with a bit of water, but if you like it thicker, simply dont add it. Adjust to your personal taste.
In honor of lightening up post-holiday, I like them as is, maybe on some sauteed greens. I dont feel that their meatball title necessitates noodles. Anyway, those are decisions Ill leave up to you.
2 Cups Cooked Lentils
2 Eggs, lightly beaten
3/4 Cup Ricotta
1/4 Cup Fresh Grated Parmesan Cheese
1 Large Clove Garlic, minced
1/2 tsp. Fennel Seed, crushed
2 Tbsp. Finely Chopped Fresh Parsley
Hefty Pinch of Dried or Fresh Thyme
1 tsp. Each Sea Salt and ! Pepper2/3 Cup Breadcrumbs (fresh or panko, preferably)
Lemon Pesto Sauce
1 Clove Garlic
1/4 Cup Pinenuts
Zest and Juice of one Meyer Lemon
1/2 tsp. Sea Salt
1 Cup Packed Basil Leaves
1/4 1/3 Cup Extra Virgin Olive Oil
2 Tbsp. Grated Parmesan
2 Tbsp. Water to thin
In a food processor, pulverize the lentils into mush. Put them in a large mixing bowl.
Add the beaten eggs, ricotta, parmesan, garlic, fennel seed, parlsey, thyme, salt and pepper and stir to mix well. Stir in the breadcrumbs and let the mix sit for 20 minutes.
For the pesto sauce, put the garlic, nuts, lemon zest and juice and salt in a food processor or blender and run until smooth. Add in the basil leaves and olive oil until you get a smooth, sauce-like consistency. Add water, oil or lemon juice to thin as desired. Stir in the parmesan and set aside. The sauce will keep covered in the fridge for about a week.
Preheat the oven to 400. Check the lentil mix by rolling a 1 round ball between your palms, it should hold together fairly well. If it seems pretty wet and it falling apart, stir in another Tbsp. or two of breadcrumbs until the ball with stay together.
Line a baking sheet with parchment paper. Roll the mix into balls and line them up on a baking sheet (they dont need lots of space between, they wont spread). If you like a bit more of a crust, brush them with olive oil.
Bake on the middle rack for 15-20 minutes until the tops are golden brown, gently turning the balls over halfway through baking. Remove to cool slightly.
Serve with your favorite noodles, on a bed of sauteed greens, or simply on their own with a nice drizzle of the pesto sauce.
I cooked: Astronomical Canapes (Avocado, Tomato, Mushroom)
Canap of Avocado, Tomato and Sauteed mushrooms
Preparation time: 25-30 minutes
Cooking time: 5 minutes
Ingredients
100g white button mushrooms and Swiss mushrooms, diced
Fresh parsley, finely chopped
1/2 onion, finely chopped
1-2 tbsp olive oil
2 ripe avocado
2 limes
1 tomato, diced
4-5 tbsp UHT cream
Salt and pepper
1 pack canape water c! racker
1. To remove flesh from avocado, cut half, remove seed and then scoop out flesh using spoon. Avocado browns quickly when exposed to air, so add the juice of 1 lime to it. Put the avocado and cream in a blender and blend to a puree, season with salt and leave aside.
2. Heat olive oil in a frying pan over medium high heat. Cook the onions for 2 minutes, then add the mushrooms and cook for another 2 minutes. Add half the parsley, season with salt and pepper and remove from heat.
3. For the tomatoes, place the diced tomatoes in a bowl and add the juice of one lime and the remaining parsley. Season with salt and pepper.
4. To assemble, first put a generous amount of avocado cream, followed by the tomatoes and finally mushroom on top.
*Did not have a scale during the competition, so all ingredients are estimated.
