Almond Joy Cups

With all these petite desserts out and about, we need a little portion control treat. These puppies are easy to make, devoured in one bite, and taste like your favorite chocolate bar!

Ok so most people are not all that into almond joys, it is like the red haired step child of Hershey, but it is amazing! It has an interesting contrast in flavors like a middle child.

Almond Joy Cups

What you need:
3 tablespoons butter, softened
6 cups shredded coconut
4 oz bittersweet chocolate
1/2 cup heavy cream
smoked almonds for garnish

What you do:
Preheat the oven to 350 F. In a food processor, blitz together the butter and 1/3 of the coconut. Mix together the rest of the coconut by hand. In a mini cupcake pan, press the coconut into the sides, making a cup for the coconut. Bake for 12 minutes then allow to cool.

Meanwhile, break up the chocolate into a bowl. Heat the cream in a small saucepan until it is just simmering. Pour it over the chocolate and allow it to sit for 10 minutes. Then stir it together to make a ganache. Using a tablespoon, fill each of the coconut cups. Top each with an almond then chill overnight.
