Chocolate biscuits with soft chocolate centres
I made the dough first on my own, refridgerated it as instructed while we had our dinner and after we finished our dinner, we rolled out the dough and made the biscuits together. It is definitely a fun activity to do with your kids, albeit a little messy - she especially had lots of fun cutting out the dough and topping it with chocolates (counting in her little head how many pieces of chocolates she can eat later, I'm sure ;P).

Since we shaped them by hand, the shapes are a little uneven but it gives them a little character and it looks a little rustic. If you find the dough a little too dry, you can add a little milk. For the ones we made, the chocolates in the centre were nice and soft, but not gooey/runny - I used Cadbury dairy milk chocolate, may have to try with some other chocolate next time. The biscuits go very well with a glass of cold milk (for the kids) or a cup of hot tea/coffee.
Chocolate biscuits with soft chocolate centres

Preparation time: 45-50 minutes
Cooking time: 10-12 minutes
Makes 30
Ingredients
140g butter, softened at room temperature
140g caster sugar (I reduced it to 120g)
2 egg yolks, at room temperature
255g self raising flour, sifted
30g cocoa powder
30 squares of chocolate (milk, white or plain)
1 tbsp of milk (optional)
You will also need two cutters, one about 4cm/1 inches and the other about 5cm/2 inches.
1. Grease a large baking sheet. Cream the butter and sugar together until pale. Beat in the egg yolks, then add the flour and cocoa powder to make a dough. Turn out and knead, then pop it into the fridge for a while (about 30 minutes).
2. Preheat the oven to 190C.
3. On a lightly floured surface, roll about a third of the dough out thinly, then cut out about 30 circles with the smaller 4cm cutter (you can do fewer if you want the biscuits bigger).
4. Put a square of chocolate in the middle of each one. Then roll the rest of the dough out and cut out the same number of circles with the larger 5cm cutter and pop them on top of the chocolate, pressing gently all the way round to seal the edge and to keep all the chocolate in.
5. Spread them out on the baking sheet and cook in the preheated oven for 10 minutes, and eat them hot or cold. Sprinkle with some icing sugar if you like.
