Best Birthday Cake


This is a bit of an overstatement. Actually I have the confidence to say no, it is the best ever. Smooth and vanilla, simple and not too sugary. The look of it is colorful and pleasant. While the crumbs add a different texture. Fine I'll keep the name.

Best Birthday Cake

What you need for the cake:
2 sticks unsalted butter, at room temperature
2 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 1/2 cups sugar
2 eggs
3 egg yolks
2 teaspoons vanilla
1 cup buttermilk
1 cup sprinkles

What you need for the frosting:
1 cup milk
3 tablespoons flour
pinch of salt
4 sticks butter, at room temperature
1 cup sugar
1 tablespoon vanilla
1/4 cup sprinkles

What you do:
Preheat the oven to 350 F. Butter and flour two round 9 inch cake pans. In a bowl with an electric mixer fitted with a paddle attachment, beat the butter until fluffy. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Add the sugar into the butter and beat until pale. Add the eggs and egg yolks, one at a time allowing the egg to completely incorporate. Then add the vanilla. On low speed, alternate in the flour mixture and buttermilk, beginning and ending with the flour mixture until just combined. Stir in the sprinkles.

Divide the batter amongst the pans and bake for 30 minutes or until a toothpick comes out clean from the center. Allow to cool and then make the frost! ing.

Whisk together the milk and the flour in a medium saucepan. Cook the milk over medium heat until it becomes solid, about 5 minutes. Then remove it from the heat allowing it to cool slightly. Stir in the salt. In another bowl with an electric mixer, cream together the butter and sugar until pale and fluffy. Add the vanilla. Then one tablespoon at a time, add the milk mixture to the butter on medium speed. Then stir in the sprinkles.

Now we have to use the frosting immediately. Place one of the cake layers on your cake stand (or whatever you are serving it on). Spread a layer of the frosting, sprinkle the cake crumbs on top, place the other cake layer on top of that, then use up the rest of the frosting on top and the cake crumbs.
