For anyone who wishes to join us in this "Cook Like a MasterChef" cook-along, but have so far been daunted by the long ingredients list or complicated methods, this is a really easy one that you can make in under 30 minutes with only 5 types of ingredients.
Almond Honey Joys
The Almond Honey Joys were a true joy to eat. Sweet and crunchy, my kids especially, loved them so much that they were all gone by the end of the day.This was made according to therecipe by MasterChef Australia's sponsor, Western Star- I did not change a thing this time,but the next time I make these, I would definitely reduce the sugar to 1/5 - 1/6 cup. You can also use peanuts if you like, but I think almonds are a much better combination.
I made them in 2 batches, one in mini cups and another in larger muffin cups. The mini ones are more kids friendly (also better for portion control) and look absolutely adorable too. You can also gift this to your friends or even serve them during your open house.

Almond Honey Joys
Recipe adapted from MasterChef Australia
Preparation time: 10 minutes
Cooking time: 10-15 minutes
Makes 12 mini and 12 large
75g salted butter
1/4 cup sugar
2 tablespoons honey
4 cups cornflakes
1/2 cup slivered almonds (I used almond flakes)
1. Over medium low heat, melt butter, sugar and honey in a saucepan until it is bubbling. Remove from heat and stir in cornflakes and almonds until coated.
2.Spoon cornflake mixture into paper case lined muffin pans and bake at 160C for 7-10 minutes or until golden. Cool completely in pans before serving. (I made mini bite-sized ones for the kiddies and they take about 7 mins while the larger ones take about 12-14 minutes)
