Dulce de Leche Icebox Cake
What you need:
2 cans sweetened condensed milk
2 cups heavy whipping cream
1 box vanilla wafers
What you do:
Bring a large pot of water to a boil. Add the cans of sweetened condensed milk (yes I know, this is insanity) and lower the heat to a simmer. Cover and leave it for 3 and a half hours. Allow the cans to completely cool before opening them.
In a large metal bowl with an electric mixer fitted with a whisk attachment, beat the cream on high speed until soft peaks form, about 4 minutes. Open up the cans and fold the dulce de leche into the cream. Spread some of the mixture on a plate and cover it with the vanilla wafers. Spread a layer of the cream mixture on the wafers then top that with another layer of cookies. Continue this process until they have all been used. Chill for at least 8 hours or overnight.
