Gingerbread Cupcakes


Horrible Holiday Tibit # 4:
Some people do not understand that at the office party, you are still technically at work thus becoming too drunk has more grievances.

Gingerbread Cupcakes

What you need:
2 sticks of butter
1 cup molasses
1 cup sour cream
zest of 1 orange
2 1/3 cups flour
3/4 baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 teaspoon salt
1/3 cup minced crystallized ginger
8 ounces cream cheese
3/4 cup confectioner's sugar
1 teaspoon vanilla

What you do:
Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners. Bring 1 stick of butter and the molasses to a boil then take it off the heat and put it in a bowl with an electric mixer fitted with a paddle attachment. Allow to cool briefly. Mix in the sour cream and orange zest. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt. Slowly add the dry ingredients to the wet until just combined. Then stir in the crystallized ginger. Divide among the cupcake liners and bake for 25 minutes.

While the cupcakes are cooling make the frosting. In a bowl with an electric mixer cream together the remaining stick of butter and cream cheese. Add the confectioner's sugar and vanilla, mixing until just combined. Frost the cupcakes with it.
