Remember the cookie? Some people are not fans of the macadamia nut but I think it is genius. And since pecans are a bit boring, a pecan pie substitute is greatly appreciated.
White Chocolate Macadamia Nut Pie
What you need:
Prepared pie crust
2 eggs
6 tablespoons butter, melted
1 teaspoon vanilla
1/4 cup corn syrup
3/4 cup brown sugar
pinch of salt
1 teaspoon lemon juice
1 cup macadamia nuts, roughly chopped
1/4 cup white chocolate chips
1/4 cup shredded coconut
What you do:
Preheat the oven to 425 F. In a large bowl, whisk together the eggs, butter, vanilla, corn syrup, brown sugar, salt and lemon juice. Place the pie crust on a baking sheet, pour the macadamia nuts and white chocolate into the pie crust. Top with the coconut. Pour the mixture over the nuts, reduce the oven to 325, and bake for 45 minutes.
