Apparently a lot of people like booze in their dessert. Here is another one for that category.
Chocolate Merlot Cupcakes
What you need:
1 1/4 cups flour
1 cup sugar
1/3 cup cocoa powder
1 tablespoon baking soda
pinch of salt
1 cup warm water
1 tablespoon vanilla
1/3 cup vegetable oil
1 teaspoon apple cider vinegar or white vinegar
1/2 cup heavy cream
8 oz milk chocolate
1 tablespoon of merlot
What you do:
Preheat the oven to 350 F and line a muffin tin with cupcake liners. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda and salt. In another bowl, whisk together the water, vanilla, vegetable oil, and vinegar. Gradually stir in the dry ingredients into the wet until just combined. Divide among cupcake liners and bake for 30 minutes.
When the cupcakes are cooled, prepare the glaze. Heat the heavy cream in a saucepan over medium high heat until it just starts to bubble. Pour it in a bowl with the chocolate, broken up into tiny pieces. Stir it together so that it melts into each other and stir in the merlot.
