Strawberry Cookies


I came across this recipe on MarthaStewart.com and was engrossed in the idea of making cookies with fresh strawberries in them.

By the way they turned out, it was nothing like the picture. They were far more brown and burnt looking. Plus the strawberries dried out. Martha you failed me.

But they did taste good. Then I saw this show.

What child would watch a show about a ten year old Martha Stewart problem solving? I prefer Jake and the Neverland Pirates. But Martha? Really? Eh. Who invested in that?

Strawberry Cookies

What you need:
2 cups strawberries, all diced up
7 tablespoons plus 2 tablespoons sugar, divided
1 teaspoon lemon juice
2 cups flour
2 tablespoons baking soda
pinch of salt
6 tablespoons butter, cold and cubed
2/3 cup heavy cream
1/2 cup white chocolate chips

What you do:
Preheat the oven to 375 F. In a medium bowl, toss the strawberries together with 2 tablespoons of sugar and the lemon juice and set them aside. In a large bowl, whisk together the flour, remaining 7 tablespoons sugar, baking soda, and salt. Drop in the butter and using your hands, press the butter into the dry mixture until it becomes coarse crumbs. Then stir in the heavy cream to complete the dough. Stir in the strawberry mixture with the white chocolate chips.

Using a tablespoon, divide the cookie batter on a ! baking s heet lined with parchment paper. Bake for 25 minutes.
