Rectangle Oreos and cucumber gum, made in China for China

Steamed Pumpkin Kueh

Steamed Pumpkin Kueh
This steamed kueh or cake is one of the Chinese favourite
snacks for Malaysian which you can find it in Dim Sum restaurants
also. You eat it with or without sweet or chilli sauce or even pan fried.

The texture is a bit soft but overall, it is edible. If less 10% of water,
the texture will be perfect. Because my rice flour was short of 45g,
I minus some water....should have minus more water.
Next try, if not enough of rice flour, I won't 'main-main" (play)
with it. Ha ha Ha. Both of my dearest colleagues Stephanie Chua and
Elly Chong agreed to my statements while they are sampling it for
theirbreakfast which I have brought for them.
They also said to addmore salt and pepper.

500g Rice Flour.
500g Pumpkin (Diced).
3tsp Salt / 2tsp Pepper / 2tsp Chicken Stock / 2tsp Five Spice Powder.
2 litres Water.

One Packet of Choi Bo (Salted Preserved Radish).
Note : Soak and wash a few times. Latersqueez! eall the water.

Pan fry the Choi Bo with little bit of oil and keep at one side.

Mix well the Water with the Rice Flour and keep at one side.

Heat up the wok with 1/2 tablespoon of cooking oil.

Pour in the diced Pumpkin and stir for few times.
Note : Do not over cook it.

Pour in the Salt, Pepper, Chicken Stock and Five Spice Powder
and stir until well combined.

Pour in the Rice Flour batter.

And keep on stirring, stirring with medium fire.

Do not stop stirring because the bottom will burn very easily.
Keep on stirring.
Note : Taste the batter, if the batter is bland, adjust the seasoning
to your choice.

Until the mixture turn thick and stiff.

Once you notice the batter leaving the side of your wok
or lumping alltogether, then it is done. Turn off the fire.

Pour the half batter into a well grease pan and smooth
the top with the back of your spoon.

Pour the other half balance of the batter into another
well grease pan and smooth the top with the back of your spoon.

Steam the batter with rapid boiling water for 50 minutes
or until the skewer come out clean.

This is another picture that I used bamboo steamer.
Steam the batter with rapid boiling water for 50 minutes
or until the skewer come out clean.

Once done, let it 100% cool because cutting into desired sizes.

Look appetizing?
You have to cook it in order to taste it because I cannot courier to you!!!
Happy Cooking.

A Shop Preview

Hi all. I was excited for today to arrive because (I think!) I'm ready to give a quick peek at some of what has been going on behind the scenes on this end. We hope this is the start of something ongoing and fun. A place where, on occasion, we'll be able to share some of our favorite items, ingredients, vintage finds, and collaborations. I'm still not entirely sure how much I'll cross-post about the details here, so the very best way to stay on top of new items & announcements will be to hop on the QUITOKEETO mailing list. I'm going to do some special recipes over there that you won't find here and that sort of thing. Looks like we're still on track for Wednesday. xo -h

Dapur Penyet

Beef, chicken, fish _ you'll find 'em all smashed up here and served Indonesian-style.

The beef version, with crunchy fritter bits, tauhu and sambal. Aromatic, though some might find the meat a tad too tough and stringy.

Iga bakar. Grilled beef ribs, gelatinous and juicy _ punishingly laden with cholesterol.

Ayam Penyet. Fried chicken, well-marinated enough to recommend and reassuringly fragrant with the familiar spices and herbs.

Ayam Bakar, grilled in the style of the Javanese city of Solo. Everything is prepared to order, so expect to wait about 15 minutes for food at peak hou! rs.

There's Ikan Keli Penyet too. We like the meatiness of catfish, but it can be a bit too bony.

Gado-gado. Not the best ever, but not bad either. Perhaps the peanut gravy could be thicker.

Slurp-worthy soto ayam _ chicken soup for the Asian soul.

Opor ayam _ a relatively obscure, rather watery recipe (at least in Malaysia?) of chicken cooked in coconut milk, which Wikipedia says is a popular Eid al-Fitr dish eaten with ketupat in central Java. No ketupat at Dapur Penyet, unfortunately!

For Asian delights of a Malaysian bent, take a 10-minute walk! to Sher aton Imperial Hotel, where Toastina serves lunchtime favorites. There are hits and misses here nowadays, but the chicken rice is surprisingly satisfying for a hotel-cooked version.
Earlier entries on Toastina: April 1, 2011, June 8, 2011andJune 11, 2011.

Toastina's Penang prawn kuey teow soup is thick and tangy.

Stir-fried chicken with cashews. Will stuff the tummy, won't stun the taste buds.

Skip Toastina's wan tan mee and head to a kopitiam instead if you want some.

Sunday Breakfast Idea - Croque Madame Muffins from Rachel Khoo's The Little Paris Kitchen

I love Sundays.

Things really start to wind down with Sunday. That works for me since the busy Monday is just round the corner.

For me, the best thing I love about this day is it is time to explore the kitchen and whip up something indulgent, like these Croque Madame Muffins.

I'm currently reading my latest cookbook acquisition, Rachel Khoo's The Little Paris Kitchen and she inspired me to get cracking on this cute recipe.

Even though most of Rachel's recipes are French in the book, there is a local connection as her dad is Malaysian. The book is pretty good with simple recipes and eye catching pictures.

These "muffins" definitely are cute and even though the bechamel sauce takes a bit more time to make, it was rather easy to whip it up. I love how the baked eggs are runny so when you split them open, they spill out their golden richness on the plate. Super yum!

My only complaint was I could not get my hands on Gruyere cheese so I settled for the less pungent Emmenthal that seemed to not add any dimension to the creamy sauce. I guess next time, it will be a stronger cheese. And since I could not find my rolling pin, I substituted using a bottle of extra virgin olive oil to flatten those bread slices. Since I had leftover sauce and the bread crusts, I used them to make a savoury bread pudding with a sprinkle of melted cheese.

Croque Madame Muffins (Makes 6, adapted from The Little Paris Kitchen)

cheese sauce
1 tablespoon butter
1 tablespoon plain flour
200ml milk
1/2 teaspoon Dijon mustard (used champagne mustard instead)
1/2 teaspoon nutmeg
30g Gruyere cheese (had to use Emmenthal, you can use Comte or Parmesan)
salt and pepper to taste

6 white bread slices, crusts cut off and flattened thinly
3 tablespoons melted butter
75g ham, cut into strips
6 small eggs

To prepare the sauce: Melt butter in a pan, add flour. Beat to form a smooth paste. Take off heat, cool for 2 minutes. Slowly whisk in the milk, until there is no lumps. Place pan back on medium heat, add mustard and nutmeg, simmer gently for 10 minutes, whisking to prevent burning and clumping. As it thickens, remove from the heat. Add the cheese, stir till it melts. If the sauce is too thick, whisk in some milk. Sieve if there are lumps.

Preheat oven to 180 degrees Celsius. Brush each flattened bread with melted butter. Press in a 6 hole muffin tin (I used a silicone one). Press down with a small glass. Divide ham between muffins followed by the egg. If egg is too much, pour away a li! ttle of the egg white. Put 2 tablespoons of sauce on top. Sprinkle with cheese and pepper. Bake for 15-20 minutes depending on how runny you like your eggs. Serve immediately.

Hotel Review: Empire Hotel Subang, Selangor, Malaysia

The Red Man says, "Welcome"...

The last two weeks, we have been busy bringing the kids around since it is the school holidays! We had so much fun, just doing simple family things together like going to the mall, playing in the sandpit, and going for delicious food. Since Baby D is still quite young, we decided to avoid travelling too far (kids get cranky if they sit in the car for too long) and instead brought them to some KL hotels for a weekend getaway!

I know technically speaking we're still in the city and not far from home, but it was a lovely experience for the children as they got to stay in a hotel, something new and exciting for them. The first hotel that we stayed in was Empire Hotel Subang which is connected to Empire Shopping Gallery. Thanks to Carol, we were given one of the nicest rooms (or rather duplex suite) in the hotel -the Empire Sanctuary.

Empire Sanctuary

The Empire Hotel is a 13-storey boutique hotel with 198 rooms, comprising of Premier Essential, Essential Plus, Dualistic, Clique (2-bedroom), Empire Sanctuary and Empire Sanctuary Optima. Published prices start from RM520 (Premier Essential) to RM1750 (Empire Sanctuary Optima), however you can get much cheaper rates if you book online via their website here.

Check-in was a breeze, while I checked in Hubby and the kids admired the art deco pieces scattered! around the hotel lobby such as The Red Man, quirky chairs and art pieces. Our duplex suite (Empire Sanctuary) is located on the 13th Floor of the hotel. When we entered our suite, the first words out of our mouth was "Wow". In Baby C's words, "Mummy, our room is SO BIG! Got stairs going upstairs."

The living room with 32" Samsung LCD TV and comfy chairs. There is also an iPod docking station just behind the sofas and complimentary Wifi!

Usually, there is a dining table set next to the living area, but because we were coming with 2 kids, the hotel have arranged for 2 single beds to be placed in the room. There is also a kitchen area with microwave oven, and a coffee machine.

The kids couldn't wait to go upstairs to have a look!

Upstairs, there is a bedroom with a king size bed, a bathroom and a study/work area. In the work area, one of the walls is a full-length glass window so you can view the living area from there. It really is a spacious suite.

Happy kids, happy papa

Someone's found the comfy bed! Spring and cotton filled king size bed with duck feather pillows.

We ended up sleeping upstairs (all of us) and also requested for a baby cot, which arrived pretty quickly after we requested for it.

Diamante bedside lamp

Someone's found the bathroom! Mummy, look - there is a bathtub! (Btw the hotel guests can use the swimming pool in Fitness First next door - we didn't know the hotel had a pool so we ended up letting the kids play in the bathtub which they liked very much)

Crabtree & Evelyn toiletries

Let's go down and enjoy the fruit platter

My happy children - they really enjoyed their stay !

There are lots of full-length mirrors all over the suite as well and a floor to ceiling window that allows plenty of sunlight into the suite.

While enjoying their fruits, my children also watched some of their favorite cartoons on the LCD TV from their USB stick. I brought the pendrive just in case, and the TV had a USB slot for this! Hurray! Otherwise, there are in-house satellite movie and music channels at a cost.

They both like the "rocking chair" in the living area.. taking turns to rock each other!

Nice corridor leading to our rooms

After a short rest in our suite, we went downstairs to the mall to have a look around. On the 2nd floor, there are lots of kids activities such as Kizsports & Gym, My Favourite Art House and Plaster Fun House. There are also lots of mechanical rides around the mall.

Arty chairs in lobby

I'm a cowboy - yee haw!

There is a Lex Slide here too, that takes u all the way down to the ground floor. Only for those above 120cm!

Goofing around :P

There are many dining options in the mall, but the hotel also has two restaurants. Di Wei, which we have visited recently serves authentic Cantonese cuisine and Kitchen Art serves local and international cuisine (themed buffets). They also have a bar/entertainment area called Shout Lounge for your happy hours.

We visited Kitchen Art in the morning f! or an ea rly breakfast (they start serving breakfast from 6.30am to 10.30am). There is an egg station, noodles station, freshly baked bread and pastries and local food such as yong tau foo and nasi lemak. I like the rendang daging and omelette. We only had a light breakfast as we were heading to Di Wei for dim sum later. (to be blogged about soon!)

Overall, we had a great, enjoyable stay at Empire Hotel Subang. Our suite was spacious and comfortable, and the location next to the mall is a plus-point for us as it makes entertaining our kids easy. Other than being an excellent choice for leisure, it is suitable for corporate and businessmen.

Loved our stay :)
