I baked: Almond Honey Joys (MasterChef)

For anyone who wishes to join us in this "Cook Like a MasterChef" cook-along, but have so far been daunted by the long ingredients list or complicated methods, this is a really easy one that you can make in under 30 minutes with only 5 types of ingredients.

The Almond Honey Joys were a true joy to eat. Sweet and crunchy, my kids especially, loved them so much that they were all gone by the end of the day.This was made according to therecipe by MasterChef Australia's sponsor, Western Star- I did not change a thing this time,but the next time I make these, I would definitely reduce the sugar to 1/5 - 1/6 cup. You can also use peanuts if you like, but I think almonds are a much better combination.

I made them in 2 batches, one in mini cups and another in larger muffin cups. The mini ones are more kids friendly (also better for portion control) and look absolutely adorable too. You can also gift this to your friends or even serve them during your open house.

Almond Honey Joys
Recipe adapted from MasterChef Australia
Preparation time: 10 minutes
Cooking time: 10-15 minutes
Makes 12 mini and 12 large

Ingredients
75g salted butter
1/4 cup sugar
2 tablespoons honey
4 cups cornflakes
1/2 cup slivered almonds (I used almond flakes)


1. Over medium low heat, melt butter, sugar and honey in a saucepan until it is bubbling. Remove from heat and stir in cornflakes and almonds until coated.

2.Spoon cornflake mixture into paper case lined muffin pans and bake at 160C for 7-10 minutes or until golden. Cool completely in pans before serving. (I made mini bite-sized ones for the kiddies and they take about 7 mins while the larger ones take about 12-14 minutes)

La Boca: Round Three. Earlier entries: Sept. 10and Sept. 13.

Empanadas here are excellent, with buttery pastry and creamy filling (seafood, beef or chicken). Served with a chunky tomato dip that packs a fiery wallop.

Uruguayan salad of mixed greens, onions, tomatoes and carrots, topped with pomegranates to turn a trite recipe into something sparkling in both flavor and appearance.

Pastel de choclo: fantastic Argentinean comfort food of spiced ground beef, butternut squash, black olives and sliced hard-boiled eggs, covered in a melt-in-the-mouth cornmeal crust and served with tomato-garlic crostini. Better than shepherd's pie.

Cassava and corn tortilla chips keep things cracking.

Lime-cured salmon ceviche, elegant and delicate, with fresh coriander, corn and chili.

Argentinean folded pizza, stuffed with turkey ham, mozzarella, kalamata olives and basil. Essentially like a calzone, expertly executed.

Flour tortillas wrapped around refried beans, guacamole, romaine, semi-dried tomatoes, celery and shaved manchego cheese. Not exactly a salad, not quite a sandwich, but totally tasty.

Going bananas: caramelized and flambeed with creme de banane and grand marnier.

Churros here come with two gloriously rich dips: the familiar-in-KL Argentinean dulce de leche and the less-often-seen Brazilian Brigadeiro chocolate cream.

La Boca's desserts are sumptuous: try the Alfajores cookies, made luxurious with a stuffing of dulce de leche and almond flakes, served with a kahlua-infused shot of milk.

Venezuelan hot chocolate. Delicious, with a nice balance of cocoa and milky notes.

Can't leave with cocktails, whether Mojitos or Palmeras (light rum, white wine, pineapple juice).

Mambo King (dark rum, cognac, cointreau) andmilk-laced Cachaca Margarita.

A Secret to Cycle in Hatyai

It was a golf trip, I secretly loaded my Speed P8 into the coach and no one knew about it.The first morning Iunveiledthis cutie to ferry me to a few places in Hatyai.I enjoy going places with my folding bike seeing different places of different corners.For instance this morning blessing by a monk to the kopi tiam operator.Had a Thai Chicken rice at this coffee shop.Yau Char Koay in Hatyai is different from ours, thedoughare smaller in size.On the third day was a great challenge that I intend to cycle to Southern Hills Golf Course about 22km from the hotel.
Just a few pedals away on the same street is this famous pork porridge.

I like the porridge though it had a lot of pork spare parts in it.Feelingguilty but because of "tham jiak" and "ho jiak" I just wouldn't resist it. Just too nice to say No.... lol.....
With the help of some printed google maps I could easily find my way. I like the motorist lane all the way to the Malaysia! n border and it makes it safe andfriendly.It was interesting to see how the locals patronise their market, their vehicles, their smiles and how they trade in the market.The turn off road to the golf course is pretty small and tricky but fortunately there is a sign board that shows the turning.I made a detour to another golf course and asked a caddy to take this photo.Tong Thai Banrai Golf Course looks good and I hope I can come here to play in the future.Banrai School as I moved on.! Ul timately I reached my destination and I was early in fact too early.I made friend with the caddies and their supervisor, he was amazed by my folding bike and he tried a short spin around the bag drop area.Since I was early I rode out off Southern Hills and visited the village nearby for a coffee. The coffee was very sweet and it came with a kettle of warm water for refill.It was time to play golf and I am back to wait for my fellow members. I did not play well at this golf course probably due to the cycling or it was a mere excuse.On the last day before we go back to Kuala Lumpur, I rode again to the market and had a nice fish ball soup koay teow. I really like their broad and thin koay teow.The lady boss served me a pot of ! Chinese tea and it's FOC.My delicious fish ball koay teow soup.
So nice to see the colours of Hatyai especially in the market.
