Crispy Fish Cake With Wholemeal Tortilla

My whole family said inside is crispy and outside is soft.
Its delicious and healthy! I made this last weekend for our breakfast.
Hope you try it out because it is very simple to make.
Its just lovely to have the whole family sitting down eating
breakfast and talk nonsense.

Warm up the wholemeal tortilla with a non stick pan.
(Note : No need to use any cooking oil or butter)



Warmed wholemeal tortilla.
Fried fish cake and sliced it into 4 strips.
Some shredded lettuce.



Place a few slices of the fish cake on top of the wholemeal tortilla.

Then, place the shredded lettuce and some of
your favourite sauces e.g. tomato sauce, chilli sauce,
thousand island sauce or BBQ sauce. (the choice is yours)



Use your finger tips and roll the wholemeal tortilla.



Roll up to the end and cut into half.



Serve with your favourite drinks.


What makes a good chicken rice?

KUALA LUMPUR, Nov 5 One Saturday afternoon, we weaved our way through traffic leading into busy Ampang, ending up at Restoran Loke Yun. Its a chicken rice restaurant with a long history and had actually been recommended to us by a Chinese chef from Macau we had met recently over lunch.

We came away from the restaurant with a letdown feeling, and thought it was definitely not worth the stress of driving all the way there. The chicken and the rice were not exceptional.

The rice here is nice and fragrant.
I had expected a wonderful chilli sauce with ginger, but both seemed too watery and had very diluted flavours. It got me thinking of the sublime chicken rice I used to have in Serangoon Gardens, Singapore, and from where my sister would actually buy bottles of the chilli sauce to take home.

The only thing I truly liked here were the super smooth chicken intestines; we had two plates of these!

So Loke Yun was forgettable, but the next week we went to Tasty Chicken Rice in Kota Damansara. Now that put a different spin on things. The rice was fluffy, nice and fragrant. The chicken retained all its natural juices and flavour. The meat was smooth, the skin looked firm and the bite was right, without it tasting like it had been overboiled, and sitting too long in the water it had been cooked in.

A must-have is the chicken liver and gizzard.
We had a plate of chicken liver and gizzard, a bowl of sour vegetables, some bean sprouts, and the stewed chicken feet. The liver was nicely cooked, staying smooth and pink, lightly doused wit! h soya s auce and garlic oil.

My only grouse with this chicken rice is again the chilli sauce which didnt have the requisite punch and was too runny.

Sour vegetables or kai choy cooked with chilli and assam keping, usually with leftover meat, is one of my favourites. Its a perky side dish, sour and hot enough. It doesnt quite go with chicken rice but its nice to eat on its own.

I loved the stewed chicken feet, which had a lightly spiced and sweet caramelised spiced flavour. They were tender, smooth and gelatinous, and you want to slurp up the delicious sauce. The bean sprouts were delightfully fat, sweet and crunchy.

I missed having the honey char siu, and Im sure its very good as it was all gone by the time we arrived. So do go there before the busy lunch hour, and you will get everything you want to eat.

I am embarrassed by how long it took me to discover carnitas, or little meats that are usually braised then roasted, and are as far I quickly became concerned, the very best thing to pile on a blistered corn tortilla. I had my first one just a couple years ago. I was pregnant at the time and protein-rich foods were ten times as delicious as they normally were so when I became obsessed with having another, and then another, I chalked it up to baby madness. But that kid is now two, and my carnita fixation has gone nowhere. (And no, people, Im not pregnant. In fact, Im pouring whiskey into my coffee as we speak, just like I always do after preschool drop-offs.)

The only thing greater than my love for carnitas was my wonderment as to how they were made. I imagined that getting a flavor so complex, and a texture so nuanced somehow fork tender in the center and caramelized to a crunch at the edges was best left to the experts, and so I continued to pay a tremendous markup in a city not known for excellence-on-a-taco because I knew Id never pull it off as well at home. You could have knocked me over with a feather when I learned that one of the most famous recipes for carnitas has but three ingredients: pork, water and salt. Three! I still cant get over it. I tell people about this all of the time vegetarians, even, who nod politely; my husband, who thinks its cool, but perhaps a little less than I do; this old lady on the crosstown bus who heard me talking about them on the p! hone But wait, theres more: not only do you only need three ingredients to make carnitas, the cooking technique is kind of brilliant. The meat braises in the water and salt (this is the tenderizing part) for a few hours and then, once the water cooks off, it fries itself in its own rendered fat (thus creating those addictive crisp ends). Did you just get hungry too?

Ok Tuck Food Court @ Lobak, Seremban

O.K. Tuck Food court is situated along the main road of Lobak, Jalan Tun Dr Ismail, Seremban and is opposite an abandoned shopping mall.
The food court is very old with rusted galvanized zinc roofing sheets. Even the customers were mostly elderly people. Obviously this place needs to be rebuilt.
I was attracted by the first stall with nice BBQ meats hanging in the lighted display.RM4.30 for this plate of Wan Tan Mee consisting with lovely & fine strands of noodle, roasted pork, char siu and blanched sawi veggie. And also not forgetting there was a small bowl of wanton soup with fried wanton and fresh wanton each. The fine strands of noodle were chewy and nice to bite. The roasted pork was delicious with popp! ing & ; crispy skin. So was the Char Siu with slight caramel stickiness in it.

Brown Sugar Bacon Biscuits

My hair is in rollers. Like kickin it old school in Velcro rollers.

No one needs to know that besides the 137 of you who read this blog, my cat, and any random person who comes to this blog after Google searching the most awesome biscuits ever made, for real.

Ah.. the rollers. Its amazing how un-cute you have to look to eventually look cute-ish. Boys dont do this. They just put on cardigans and look hot.

Now theres a lot of good news I need to tell you about these biscuits. First: bacon. Second: brown sugar. Third: butter. Fourth: theyre freaking biscuits!!! And fifth: they do not have an un-cute phase. Theyre all cute/delicious/freak-out-worthy, from beginning to end.

Do you really need convincing? No. Do I really need these rollers? Um today? Yes.

I love when baked goods start with salty bacon and brown sugar.

Its really a good path.

Cold butter is the key to big, fluffy biscuits.

It gets incorporated into the dough with fast fingers.

Sweet and salty bacon is paired with very coarsely crushed black pepper.

Every day needs a bite of spice!

These biscuits besides being completely delicious are smack dab in the middle of sweet and savory.

You could top them with butter and jam, and feel just right. Or! You could add a fried egg and tomato jam and have a perfectly tasty morning.

Its up to you. Choose your own bacon biscuit adventure!

Brown Sugar Bacon Biscuits

makes about 8 biscuits

For the Bacon:

6 slices of bacon

1 tablespoon brown sugar

coarse ground black pepper

For the Biscuits:

3 cups all-purpose flour

2 tablespo! ons brow n sugar

2 tablespoons granulated sugar

3 teaspoons baking powder

1 teaspoon baking soda

3/4 teaspoon salt

1/2 to 1 teaspoon coarse ground black pepper

3/4 cup cold unsalted butter, cut into small cubes

1 large egg

3/4 cup buttermilk

Place a rack in the center of the oven and preheat oven to 375 degrees F. Line a baking sheet with foil or parchment paper and spread bacon across baking sheet in a single layer. Sprinkle with brown sugar and black pepper. Bake until crisp and cooked through, about 13 to 15 minutes. Remove from the oven and carefully use tongs to place the hot bacon on a cutting board. Dont put the bacon on paper towels or they might stick. Ick! Allow to cool until youre able to handle the slices and chop into medium chunks. Set aside.

Increase oven temperature to 425 degrees F. Line another baking sheet with parchment paper or foil, and set aside.

In a mixing bowl, sift together flour, sugars, baking powder, baking soda, salt, and black pepper. Add cold butter and use your hands to quickly break the butter into the flour until mixture resembles coarse meal. In another bowl, combine egg and buttermilk and beat lightly with a fork. Add to flour mixture all at once, stirring to incorporate. Once batter is nearly incorporated, add bacon and mix in.

You may want to dump the shaggy biscuit mixture onto a lightly floured board to knead together a few times. Dont overwork the dough and melt the butter, Just make sure it comes together.

Roll or pat dough into a 1-inch thickness. Cut into 2-inch rounds using a biscuit cutter or cut into 22-inch squares. Reshape and roll dough to create more biscuits with excess scraps. Place on an ungreased baking sheet and bake at 425 degrees F for 12-15 minutes. Serve biscuits warm with jam or a fried egg.

I love these biscuits the day they are made. They can be kept in the fridge and will last for two days. The shaped, uncooked biscuit can also be frozen. Thaw in the fridge overnig! ht and b ake up in the morning.
